I have some transactions that are showing up at 2am GMT0 on Jan 1, but I performed them on dec 31st (GMT-5) in my timezone. How can I adjust it so that these can be included in my tax report of 2021?

Assuming the transactions were imported via API, you could Soft Delete the transactions and then add them back manually with the corrected date/time.
